“Ammi,can I lick off the pan”. This is what we used to ask every time
my Ammi(Mother)makes Firni.

When she fills up all the bowls, there is scrapes left on the sidewall
of cooking pan and we enjoys licking off the pan with the index finger.
Did you do the same? Or your kiddu has asked you something like that?
Now, you can see since childhood I’m eating this Firni and things
related to our childhood always gets special place to our Heart. This is the
reason I wanted to present it to you in a different style, and Alhumduliallah, certainly
I have achieved my goal. I took extra effort to make Firni visually appealing.
Firni or you can say rice pudding, the procedure calls for soaked rice
and it use to thicken the milk and settled as per your mould shape.

Cooking Time: 15 minutes
Refrigeration: 1-2 hours
Refrigeration: 1-2 hours
Serves: 12
Ingredients:
| Milk | 1 lit |
| Sugar | 110 gm |
| Rice | 100 gm |
| Kewra | 4-5 drops |
| Dried fruits | 50 gm |
Method:
- Soak rice in a medium size bowl for 30 minutes.Cover it with tap water. Later, coarsely grind it and keep it aside.
- Dissolve sugar in a raw milk and strain it.
- Keep the milk pot on gas, when it comes to boiling point add grounded rice and keep it stirring on high flame for 10-12 minutes.
- Lastly, add Kewra and stir it well.
- Pour into the prepared dish or small serving bowls.
- Sprinkle the sliced dried fruits and keep it in refrigerator for an hour.
- Serve the chilled Firni to your guest.
RS Notes :-)
- Never leave you spatula while stirring, avoid making lump.
- Rice should be coarsely ground, do not make it too thin or leave whole grains.
- It's not necessary to blanch the dry fruits and if you want to do so here is the link
